- 200 grams oatcakes
- 2 Tbsp. freshly grated Parmesan
- 100 grams butter (melted)
- 280 grams full fat cream cheese (we used Philadelphia)
- 400 grams ricotta
- 100 grams brie (cut into small chunks)
- 100 grams goat (soft, ’s cheese, cut into small chunks)
- 150 grams blue cheese (crumbled, we used stilton)
- 4 egg yolks (large free-range, see tip)
- 125 grams membrillo (cut into 1cm cubes, see Know-how)
- 500 grams red grapes (on the vine)
- 1 Tbsp. runny honey
- olive oil (Drizzle)
- 20 cms Cake (loose-bottomed, tin, the base lined with non-stick baking paper)
