- 200 grams baby spinach (fresh)

- 8 medium tomatoes (chopped)
- 1 aubergine (large, eggplant, diced)
- 3 sun dried tomatoes (large, the kind in oil, chopped)
- 1 tsp. cumin powder
- 1 Tbsp. tomato puree
- 200 mL water
- 1/2 tsp. black pepper
- 2 tsp. agave
- 1/2 tsp. fennel seeds
- 200 grams firm tofu (block, I use dragonfly)
- 2 Tbsp. fresh rosemary (chopped)
- 50 grams mixed nuts
- 3 Tbsp. nutritional yeast
- 1 tsp. yeast extract
- 1/2 tsp. salt
- 4 Tbsp. white wine vinegar
- 16 sheets filo pastry (vegan)
- vegan margarine (melted, for brushing)
- pistachio nuts (Handful chopped)
- olive oil (to drizzle)
- agave nectar (to drizzle)
