- 4 sweet potatoes (medium tan-fleshed, white skin)
- 3 red onions (medium)
- 3 Tbsp. olive oil (could probably get away with less, but I reduced it a lot from the original recipe)
- 2 Tbsp. fresh rosemary (finely chopped, divided, I've also made this with frozen rosemary, If you only have dried rosemary I would grind it.)
- 1 tsp. sea salt
- ground black pepper (fresh, to taste)
- 1/2 cup grated Parmesan cheese (freshly)
