- 1 Tbsp. duck fat (very cold)
- 1/4 cup Gruyere cheese (grated)
- 1 eggs (lightly mixed with a fork)
- 3 tsp. ice water
- 3 red potato (medium)
- 5 leaves chard (stems minced and leaves rolled up and cut into a chiffonade)
- 4 scallions (sliced)
- 1 Tbsp. duck fat (or olive oil)
- 3 eggs
- 3 Tbsp. heavy cream
- 3 Tbsp. creme fraiche
- 2 Tbsp. dijon (whole grain)
- 2 Tbsp. dijon (spicy)
- 1 tsp. thyme
- 1 tsp. tarragon
- pepper
- salt
- 1/4 Gruyere cheese (very finely grated like on a microplane - measured fluffed - don't compact it)
