Description
I found the basis of this recipe online several years ago when looking for a vegetarian fall holiday main course, and I have adjusted it slightly over the years. It is easy to make, hearty and satisfying, and appeals to even the most carnivorous guests.

- 16 oz. cottage cheese (cartons)
- 4 eggs (beaten)
- 1 tsp. olive oil
- 6 oz. tomato paste
- 1 oz. onion soup mix
- 1 cup chopped walnuts (finely)
- 2 1/2 cups bran flakes
- 1/3 cup onions (chopped)

Directions
- Preheat oven to 350 degrees F (175 degrees C).
- Grease a loaf pan.
- In a large bowl, combine cottage cheese, eggs, olive oil, tomato paste, soup mix, walnuts, cereal and onion.
