- 2 Tbsp. thyme (fresh chopped, plus more to top)
- 2 cups all-purpose flour
- 4 tsp. baking powder
- 1 tsp. salt
- freshly ground black pepper
- 1 cup shredded zucchini (press with paper towels to remove excess water)
- 1/2 cup corn (fresh or frozen)
- 2 cups chopped tomatoes (seedy pulp removed and sprinkled with salt)
- 3/4 cup freshly grated Pecorino Romano cheese
- 3/4 cup crumbled feta cheese (bigger crumbles)
