  • 1 cup all-purpose flour
  • 1 pinch salt
  • 1 pinch black pepper
  • 1 pinch sugar
  • 3 eggs (Pastured)
  • 3/4 cup buttermilk
  • 3 tablespoons butter (melted + un-melted butter for cooking.)
  • 1 pound fresh mushrooms (any variety you prefer, cleaned with a dry cloth and roughly chopped., I used a mixture of button, portobella, enoki and shiitakes.)
  • 1 shallot (sliced.)
  • 1 clove garlic (finely chopped.)
  • 1 handful broccolini (woody ends chopped off & stemmy leaves removed and discarded.)
  • 3 sprigs thyme (stemmed and roughly chopped.)
  • 1 lemon
  • ricotta (Fresh, I live for Buffalo Ricotta but if you can't find it, Cow will work fine, drained through a fine sieve to remove excess moisture.)
  • butter (Dab of)
  • extra-virgin olive oil
  • cracked black pepper
  • coarse sea salt
  • bacon
  • lemon wedges
