  • 1 cup self-rising flour
  • 1 cup milk
  • 1 egg (lightly beaten)
  • 1 cup cheddar cheese (grated)
  • 1/4 cup chives (snipped)
  • 1/2 cup cream cheese (spreadable)
  • 1 celery stalk (finely diced)

    Directions

    1. Sift the flour into a large bowl. Add the milk and egg and whisk until a smooth batter forms. Stir in the grated cheese and chives.
    2. Heat a large nonstick skillet on medium heat and spray with no stick cooking spray. Place tablespoons of batter in pan. Cook for 2 mins on one side, then turn and cook for another minute. Remove from the pan. Repeat with the remaining batter to make a total of 15 pancakes. Set aside to cool.
    3. Combine the cream cheese and celery in a small bowl and season to taste. Spread the cream cheese mixture over 10 pancakes. Stack 2 pancakes together, cream cheese side up, then top with a plain pancake to form 5 triple-decker stacks. Serve.
