Description
Drawing inspiration from Vietnamese cuisine, this recipe for Sauteed Fava Beans makes a great addition to the dinner table. Flavored with plenty of ginger and garlic, the fava beans are sauteed along with peas, green peppers, and green olives to flavorful perfection. Full of green power, roasted peanuts, fresh coriander, and a drizzle of rice vinegar are the final touches to this tasty dish. Serve with fluffy white or brown rice for a vegetarian lunch or dinner.

- 600 grams fava beans (frozen)
- 200 grams frozen peas
- 2 garlic cloves
- 1/2 tsp. ginger
- 2 tsp. green peppers (chopped)
- 3 tsp. fresh coriander (chopped)
- salt (to taste)
- olive oil
- rice vinegar
- 1 cup pitted green olives
- 4 tsp. toasted peanuts

Directions
- Boil the fava beans and peas in salted water and set aside.
- In an already hot wok, add the oil, garlic, ginger and saute until golden.
- Add the peppers and saute for another 2 minutes.
