My new favorite and so simple. I've also used my air fryer and sprayed the eggplant with olive oil.

Don’t know how I’d lived my whole life never eating this vegetable! Simplistic and DELICIOUS!!!

Soaking the eggplant in milk was a great idea to cut the acidity and give the eggplant a nice texture. Wasn't crazy about the honey but would make again without it.
