Description
This is great dressing or stuffing. It was originally used for a pheasant recipe. I adjusted it a bit for Thanksgiving with turkey.
Ingredients

8 SERVINGS
- 1/2 lb. sweet Italian sausage (bulk or take out of casing)
- 2 Tbsp. olive oil (spoons)
- 2 cloves garlic (fresh, crushed)
- 1 cup yellow onion (chopped)
- 1/2 cup fresh mushrooms (chopped, any combination)
- 1 cup fennel bulb (chopped med)
- 1 fresh parsley
- 10 1/2 cups stock (chic, or broth)
- 3 beaten eggs (lightly, or 4 egg whites)
- 7 cups bread cubes

Directions
- brown sausage with oil, - add onion, fennel mushrooms, and herbs to sausage mixture and saute 5 min - add 21/2 cps chic stock to sausage mixture and simmer for 3 min.
- In lrg mixing bowl put eggs in and lightly beat, add the cooled sausage, herb, chic stock mixture, add 14 cps stuffing, mix well. if too dry add last 1/2 cps of chic stock, let set for 1/2 hr to let liquid absorb into bread stuffing
- Preheat oven 350 oil or butter a 9x13 baking dish, put dressing in baking dish and cover with foil, bake for 30 min, then remove foil and bake apron 20 min longer-it should be golden brown on top and moist in middle, let set for 10 min before serving
- Can use this stuffing or dressing to stuff chicken, pork, or game hens
