- 1/2 yellow onion (a medium, diced)
- 1 red bell pepper (medium, chopped)
- 12 oz. chicken sausage (sliced into coins, I used apple chicken sausage)
- 8 eggs
- 4 oz. garlic (& herb goat cheese, crumbled into pieces)
- sea salt (to taste)
- black pepper (to taste)
- 1/4 tsp. crushed red pepper (omit if you are sensitive to spice)
- 1/2 cup shredded Parmesan
