Description
A savory brunch or lunch option, this Sausage and Potato Stew Quiche incorporates all of your favorite flavors from a warm hearty stew. Incorporating boiled potatoes, sausage, and cabbage into the creamy manchego and egg filling, this quiche is full of rich flavor. Make your own pie crust for this Sausage and Potato Stew Quiche or purchase a premade crust. You will need to blind bake the pie crust before adding the filling to make sure you do not end up with a soggy bottom.

- pie dough (Unsweetened, purchased or homemade)
- 1 boiled potato (removed from a stew)
- 1/4 cabbage (boiled, removed from a stew)
- 1/2 sausage, cooked, removed from a stew (cooked, removed from a stew)
- 3 eggs
- 60 mL whipping cream
- salt (to taste)
- 1 cup manchego cheese (grated)

Directions
- Preheat the oven to 190 Celsius.
- Roll out the dough and place into a pie pan. Bake for 10 minutes, weighted.
- Chop the potato, sausage, and cabbage and place into the pie pan.
- Beat the eggs together with the cream, adding 4 pinches of salt. Pour over the stewed vegetables and meat. Sprinkle with cheese.
- Bake until golden brown. Remove from oven and cool slightly before serving.
