- 1 handful fennel fronds (fresh, roughly chopped)
- 1 large carrot (diced)
- 5 cloves garlic (minced)
- 2 sprigs thyme
- 1/3 cup white wine (sauvignon blanc)
- 8 cups chicken stock
- 5 oz. baby spinach (or greens, I used Earthbound Farms Power Trio with baby chard, kale, and spinach)
- 1 beefsteak tomato (large, diced)
- 1 baguette (long, sliced into thin rounds)
- 8 oz. gouda cheese (shredded)
