- 1 cup milk
- 1 Tbsp. dried parsley
- 3 cups shredded cheese (choice, about ¼c per bowl)
- 2 cups salsa (about tbsp. per bowl)
- 2 lb. turkey breakfast sausage (ground)
- 4 sweet potatoes (or yams, chopped large)
- 4 bell peppers (chopped large)
- 2 onions (chopped large)
- 8 oz. sliced mushrooms
- 2 yellow squash (or any kind you like, chopped large)
- 2 Tbsp. olive oil
- 2 Tbsp. taco seasoning
- 2 cloves garlic (minced)

Directions
- In large bowl, beat eggs and add parsley and milk to the mixture, set aside
- Preheat oven to 375
- Add chopped vegetables to roasting pan, drizzle with olive oil, taco seasoning, and salt and pepper, toss to coat
