Ingredients

- 6 eggs
- 1/4 cup heavy cream
- 1/4 tsp. dry mustard
- 1/4 tsp. Italian herbs
- 1 pinch salt
- 1 pinch pepper
- 2 cups bread (cubed, Italian or French)
- 1/2 lb. ground pork sausage (browned, fresh ground sausage should be cooked to 160°F)
- 1/3 cup shredded cheddar cheese
- 1/3 cup red pepper (chopped)
- 2 green onions (chopped)
- chives (chopped, to garnish, optional)

Directions
- Spray four oven-safe ramekins with cooking spray.
- Whisk together eggs, heavy cream, dry mustard, Italian herbs and salt and pepper. Set it aside. Fill each ramekin with browned pork sausage, cheddar cheese, red peppers and onions. Mix to evenly distribute the ingredients. Pour the egg batter evenly into each ramekin until about 3/4 of the way full. Place the filled ramekins onto a baking tray.
- Bake at 350°F for about 24 minutes or until puffed and golden brown. Garnish with chopped chives and serve immediately.
