- 2 Tbsp. olive oil
- chipolata sausages (20-30 depending on how hungry your family are! good quality)
- 1 large red onion (peeled and chopped)
- 2 red peppers (deseeded and chopped)
- 20 chorizo (mini, the bitesize ones, chopped in half)
- 3 cloves garlic (peeled and minced)
- 2 tsp. paprika
- 1 tsp. dried thyme
- 1/2 cup red wine (this is optional, leave it out if you prefer)
- 2 chicken stock cubes (crumbled)
- 14 oz. chopped tomatoes (tins, 3x400g)
- 14 oz. haricot beans (drained and rinsed)
- 14 oz. cannellini beans (drained and rinsed)

This dish was easy to prepare and was very tasty. The perfect meal for a cold day. The second time I made it I added a couple of chopped chilies as I enjoy spicy food and it did not disappoint.
As I was not preparing a meal for 10 people I obviously used less sausage and one tin less of the chopped tomatoes. I did however still use two red peppers and two tins of beans.
All in all, very enjoyable and now a fixture in my monthly menu.
