- 2 pork sausages
- 150 grams button mushrooms (small)
- 2 smoked back bacon (rashers, roughly chopped)
- 1 garlic clove (smoked, roughly chopped)
- 1 leek (large, sliced)
- 4 tomatoes (peeled and chopped)
- 4 tsp. tomato purée
- 570 mL beef stock
- 400 grams cannellini beans (drained)
- 400 grams kidney beans (drained)
- 1 head broccoli (cut into florets)
- 1 baguette (small, thinly sliced)
- 40 grams cheddar (medium strength)
- 1 handful parsley (chopped, to garnish, optional)

Tasty - use good sausage. somewhere between a healthier cassoulet and a chili. I used andouille, added a mirepoix with the leek, and a dash of mustard powder and lemon pepper. only used 2 slices of bacon because that's what I had. Didnt have tomato but used 2x the tomato paste or more. Added the brocolli at the same time as the broth to make it a one pot meal. The cheese brings it together.
