- 3 eggs (whisked)
- 1/2 red onion (thinly sliced)
- 1 head broccoli (cut into small florets)
- 1 carrot (cut in half lengthways then thinly sliced on an angle)
- 100 grams sugar snaps (stringy end trimmed)
- 1 capsicum (seeds and core removed and thinly sliced)
- 1 cup frozen peas (defrosted)
- 4 Tbsp. water
- 35 grams chopped peanuts
- 1 lime (cut into wedges)
