- 1 1/2 cups mushrooms (sliced)
- 1 tsp. chili powder
- 1/2 tsp. paprika
- 1/4 tsp. canela
- 1/2 tsp. coriander
- 1 tsp. ground cumin
- 1/2 tsp. oregano
- 3/4 cup frozen corn
- 15 oz. black-eyed peas (rinsed and drained)
- 1 1/2 cups vegetable broth (low sodium)
- 1 Tbsp. tomato paste
- 1 tsp. sea salt (more to taste)
- 1/4 tsp. ground black pepper
- 1/4 cup raw cashews (soaked in water 2-4 hours)
- 1 cup unsweetened almond milk (hot, be careful not to burn the milk)

- 1 tsp. apple cider vinegar (or lemon juice)
