- 1 lb. chicken breasts ((2 chicken breasts))
- 3/4 cup barbecue sauce (divided)
- 1/2 red onion (chopped)
- 1 red bell pepper (chopped)
- 15 oz. black beans (rinsed and drained, eyeball it)
- 15 oz. sweet corn (rinsed and drained, eyeball it)
- 10 oz. diced tomatoes
- 2 Tbsp. green chilies (from 4 oz. can green chilies)
- 4 garlic cloves (minced)
- 1 Tbsp. olive oil
- 1 Tbsp. butter
- 1/4 cup flour
- 1 1/2 cups lower sodium chicken broth
- 1 1/2 cups low fat milk
- 1 tsp. ground mustard
- 2 Tbsp. seasoning mix (dry ranch dressing)
- 1 tsp. chili powder
- 1/2 tsp. ground cumin
- 1/2 tsp. smoked paprika
- 1/2 tsp. dried oregano
- 1/4 tsp. chipotle pepper (optional for more heat)
- 1 tsp. salt
- 1/4 tsp. pepper
- 1/2 cup shredded mozzarella cheese
- 1/2 cup shredded sharp cheddar cheese
- 1/4 cup sour cream (or Greek yogurt (more or less to taste))
- hot sauce (to taste)
- turkey bacon (Crumbled, – we like a lot!)
- fresh cilantro (chopped)
- ranch dressing (drizzle of)

This was great! My kids and husband loved it - I originally made it to take in to work for myself and my husband but my teenage sons started eating it too and we didn't have as much leftover. Good thing too because I didn't think it reheated well - my husband though didn't complain.
