- 1/4 cup sugar (plus 2 1/2 tablespoons extra for pecan roasting.)

- 1 pinch salt
- 2 packets graham crackers (about 10 ounces, crushed)
- 24 oz. cream cheese
- 14 oz. dulce de leche
- 2 Tbsp. all purpose flour
- 3 tsp. kosher salt
- 2 tsp. fleur de sel
- 1 1/4 cups granulated sugar (* I used 1 cup of sugar)
- 1 Tbsp. vanilla extract
- 4 large eggs (at room temperature)
- 1/2 cup granulated sugar
- 3 Tbsp. water
- 1/2 cup heavy cream
- 2 Tbsp. butter
- 1 tsp. kosher salt
- 1 tsp. fleur de sel
- 1 tsp. vanilla extract
