- 1 Tbsp. sugar
- 1/2 tsp. salt
- 1/2 tsp. ground turmeric
- 1/2 tsp. ground cinnamon
- 1/2 tsp. ground cardamom
- 1 Tbsp. apple cider vinegar
- 3 Tbsp. chilled water (2 –)
- 2 lb. pears (baking, such as Bosc or Anjou, about 4 pears, sliced)
- 1 Tbsp. lemon (juice of)
- 1/4 cup light brown sugar
- 1 Tbsp. arrowroot powder (or cornstarch)
- 1/2 tsp. ground cinnamon
- 1/4 tsp. ground cardamom
- 1/4 tsp. salt
- 1 pinch ground turmeric
- 1/4 cup caramel sauce (salted, or more as desired)
