- 2 lb. boneless chicken breasts (cut into strips)
- 2 tsp. ground cumin (divided)
- 1 1/4 tsp. salt (divided)
- 1/4 tsp. pepper
- cooking oil (such as olive or avocado oil)
- 1 tsp. paprika
- 1 cup chicken broth (or bone broth)
- 1/2 cup salsa
- 3 cloves minced garlic
- 2 lb. sweet potatoes (potatoes, or yams, cut into small 1” chunks)
- 1 cup roasted red pepper (jarred, diced OR 1 cup fresh red pepper, diced)
- 1/3 cup fresh cilantro (loosely packed, chopped)

This turned out fantastic! It was our first instant pot meal...so easy. We used yams and added kidney beans in place of black beans. I think we might reduce the liquids next time - the stew ended up a little watery, but delicious!

We made this and it was delicious! I added in extra salsa, more chicken broth, sweet potatoes and red potatoes with a bit of creole seasoning. We topped it cheese and served it over a bed or rice. We will definitely be making this again.

Omg I loved it. Had so much flavor! I liked the roasted red pepper. And only 30 mins in the InstantPot!

So easy, and so yummy! We will definitely make it again. I may add a bit more broth next time, we were scraping the bottom of the pot for more!

This is delicious. I made it a second time with orange roughy and it was even better.
Modified Recipe:
* 2 lbs. wild orange roughy cut into squares
* 1/2 tsp ground chipotle pepper
* 1 1/2 tsp. ground cumin (plus sprinkle on fish)
* salt
* teaspoon pepper
* olive oil
* 1 teaspoon paprika
* 1 cup vegetable broth
* 1 cup medium salsa
* 3 cloves minced garlic
* 2 lbs. potatoes sweet potatoes or yams, cut into small 1” chunks
* 1 cup jarred roasted red pepper diced OR 1 cup fresh red pepper, diced
* 1/3 c. loosely packed fresh cilantro chopped
* 1 can black beans
1. Sprinkle Fish on both sides with ground cumin, salt, ground black pepper, and olive oil. Marinate while prepping the rest.
2. In a small bowl, combine paprika, vegetable broth, salsa, garlic, 1 ½ teaspoon cumin, 1/2 tsp chipotle, and remaining 1 teaspoon salt.
3. In a 5-6 quart instant pot, place chopped sweet potatoes or yams. Place black beans and diced red pepper on top of potatoes and pour broth mixture over all of it.
4. Cover and seal instant pot and cook on beans/chilli for 25 minutes. Once done, use quick release of steam.
5. Add fish, cover and seal, and set pressure cooker for 2min.
6. Allow instapot to naturally release (about 20min).
7. stir in cilantro as desired. Serve and enjoy!
