This was a really easy and quick recipe and it was DELICIOUS! I used a 12 oz. center cut atlantic salmon filet and needed to extend the cooking time to about 25 minutes. Served over brown rice with a bit of pico de gallo on top that complimented the cucumber/avocado topping.
