- 1/4 cup olive oil
- 1 1/2 cups salmon (flaked cooked, see Note)
- 15.5 oz. white beans (such as cannellini, rinsed and drained)
- 1/2 cup chopped onion (any kind)
- 1/2 cup chopped celery (use the tender inner stalks if possible)
- 1/4 cup fresh parsley (minced)
- 2 Tbsp. capers (rinsed and drained)
- 1/4 cup fresh lemon juice
- 3 Tbsp. extra virgin olive oil
- kosher salt
- freshly ground pepper
