- 4 salmon (thick, skinless fillets of, about 6 ounces each ***I used wild salmon fillets)
- 2 pkg. puff pastry (defrosted in refrigerator)
- 1 beaten egg (lightly)
- 1 tsp. milk
- 3 egg yolks
- salt
- pepper
- 2 Tbsp. lemon juice
- 2 sticks unsalted butter (*** I used less than 1 stick)
