- 24 oz. boneless skinless wild salmon (I used wild Alaskan Sockeye salmon)
- 1 sweet onion (large, chopped)
- 1 medium carrot (peeled and grated, scant cup)
- 1 parsnip (medium, peeled and grated, scant cup)
- 1/4 bunch fresh dill (chopped fine, 2 tablespoons)
- 1 Tbsp. cooking oil (mild, plus extra for greasing loaf pan, I used olive oil)
- 1 Tbsp. cane sugar
- 1 tsp. lemon juice
- 3/4 cup cold water (plus extra for cooking in water bath)
- 42 grams potato starch
- 1 duck egg (or 2 large chicken eggs)
- 2 1/2 tsp. kosher salt (if using other salt use ½ tsp less)
- 1 tsp. freshly ground black pepper
- 4 Tbsp. horseradish (jarred, I use Bubbe’s brand)
- 3 beets (small cooked)
- 1 pinch kosher salt
