- 2 Tbsp. roasted red pepper (minced, from a jar)
- 2 Tbsp. fresh parsley (minced)
- 1 1/2 tsp. Dijon mustard
- 1/3 cup red wine vinegar
- 1 cup virgin olive oil (extra-)
- egg whites (original recipe called for chopped boiled, which I couldn't convince myself was essential in this!)
- 1 handful romaine lettuce (shredded)
- 1 avocado (diced)
- 4 small tomatoes (chopped)
- 1/2 cup crumbled feta (or less)
- 1/2 cup shrimp (cooked salad)
- fresh ground black pepper (to taste)
