- 2 Tbsp. spice (lamb, or bbq mix of your choice)
- oil (for frying)
- 2 large onions (roughly chopped)
- 2 large carrots (sliced)
- 3 stalks celery (roughly chopped)
- 4 cloves garlic (mashed)
- 3 sprigs fresh thyme
- 250 mL fat (Bastard The Golden Reserve wine)
- 400 grams chopped tomatoes (tinned)
- 1 Tbsp. tomato paste
- 350 mL stock
- sea salt flakes
- freshly ground black pepper
- 1 Tbsp. sugar
- 3 sprigs rosemary
- 400 grams samp (uncooked, soaked in water for 3 hours and drained)
- 750 grams butternut (cut into chunks)
- olive oil (for drizzling)
- 1 tsp. chilli flakes
- sea salt flakes
- 1 knob butter
- 15 mL extra virgin olive oil
- 1 large onion (finely chopped)
- 1 pinch salt
- 2 sprigs fresh thyme
- 3 cloves garlic (minced)
- 250 mL fat (Bastard Sauvignon Blanc, at room temperature)
- 2 pinches saffron
- 1 liter vegetable stock (warm)
- 1 knob butter
- 40 grams grated Parmesan cheese
- salt
- freshly ground black pepper
