- 2 fennel bulbs (large halved and very thinly sliced)
- 1 cup frozen peas (fresh or thawed)
- 1 cup green olives (whole)
- 3 cups low sodium chicken broth
- 2 Tbsp. fresh lemon juice
- 1 cup couscous
- 1 yellow onion (small finely chopped)
