- 3/4 cup bittersweet chocolate (4½ oz, 125 gm good quality, chopped)
- 9 Tbsp. unsalted butter (4½ oz, 125 gm, softened at room temperature)
- 1 cup confectioners sugar (4½ oz, 125 gm, aka icing sugar or powdered sugar)
- 6 large eggs (separated, at room temperature, see note above about egg whites)
- 1 tsp. vanilla extract
- 1/2 cup granulated sugar (7 oz, 100 gm)
- plain flour (1 cup, 120 ml, 4½ oz, 125 gm all-purpose, for volume measurement, spoon gently into measuring cup and level top)
- 1 pinch fine-grain salt
- glaze (Apricot, see recipe below)
- chocolate glaze (see recipe below)

- 1 cup heavy whipping cream (cold)
- 1 1/4 cups apricot jam (14 oz, 400 gm, or preserves)
- 2 Tbsp. water
- 1 cup granulated sugar (7 oz, 200 g)
- 1/2 cup water
- 4 oz. bittersweet chocolate (115 gm good quality, chopped)
- 200 grams chocolate (I used 100 gm 70% cocoa chocolate and 100 grams milk chocolate)
- 200 mL cream
- 1/4 cup chocolate (1.8 oz, 50 gm chopped good quality)
- 1 tsp. vegetable oil
