- 450 grams sweet tamarind (pods400ml water InstructionsPeel the tamarind pods, remove the inner pulps and add in a saucepan.Add water to cover the tamarind pulps then cover the saucepan and allow to boil for at least 10 minutes, depending on the heat temperature or until tender. Mash the softened tamarind pulps gently to separate the seeds and the chaffs from the pulps after which you then add more water to wash off the seeds and chaffs from the pulps.Strain the chaffs and seeds from the pulps before heating the liquid pulps for at least 5-10 minutes or until thickened to your satisfaction.N:B Remember not to add too much water into the tamarind pulps while washing and straining them so that the sauce can easily thicken.Once the boiling sauce has thickened, your tamarind sauce is ready for use.
