- 4 sweet potatoes (medium size)
- 2 Tbsp. EVOO
- sea salt
- freshly ground pepper
- 1 banana (WITH Peel)
- oil (1 tsp. Veg.)
- 4 slices bacon (chopped)
- onion (I large, ... Thinly sliced rings)
- 1 jalapeño pepper
- 1 cup sour cream
- 1/4 bunch chives (chopped)

Directions
- Preheat oven to 400. Trim and peel the sweet potatoes and cut each into 8 wedges. Toss with Olive oil and season generously with salt and pepper. Spread the potatoes on a sheet pan, with the whole banana( with peel still intact), and roast in the oven.
- Heat veg oil In sauté pan over medium-high heat and cook the bacon until just turning crisp. Add the onion and chile pepper slices, to the pan along with a pinch of salt. Cook onion until it is caramelized, then turn off the heat.
- After the banana is in the oven for 10-15 min., it's skin should be black and it's flesh should be very tender. Remove banana from oven and when it is cool enough to handle, peel and add the fruit to a blender with sour cream. Purée until smooth and add a few pinches of salt to taste.
- After 30 min. Of roasting, the sweet potatoes should be cooked and slightly browned at the edges. Transfer potatoes to a serving dish. Top with the onion, bacon, and chile mix. ( for even more heat, thinly slice a second Serrano chile and sprinkle on top). Garnish with chives, season with salt and drizzle with olive oil. Serve with banana sour cream.
