- 1 squash (Blue, 2 Sweet Potatoes or 1 Large Butternut, chopped)
- 3 Tbsp. chia seeds
- 1 1/2 cups white quinoa (can also use buckwheat, or brown rice)
- 250 mL almond milk (or Coconut Milk, thin coconut milk, not tinned)
- 2 Tbsp. coconut milk (Solid, tinned - optional)
- 1 tsp. cinnamon
- 1 tsp. nutmeg
- 1 tsp. dried herbs (Mixed)
- 1 pinch Himalayan pink salt (or 1 Teaspoon Tamari)
- pepper (to taste)
- 200 mL organic vegetable stock (can also combine 200ml with 1 Tablespoon Nutritional Yeast)
- 2 Tbsp. nutritional yeast
- 1 Tbsp. coconut oil
- 1 Tbsp. fresh rosemary
- 2 cloves garlic (or 1 Tablespoon Wild Garlic, diced)
- 1 courgette (grated, optional)
- 1/4 cup cauliflower (or Broccoli Heads, not stems, grated, can also use carrot, beetroot or kohlrabi)
- 2 handfuls spinach
- 2 Tbsp. tahini (Smooth)
- 1 tsp. mustard (optional)
- 2 cups water
