Description
This recipe was prepared from all the left overs I had in my fridge and it turned out really tasty. Its the Green bell peppers stuffed with a mixture of boiled potato and cottage cheese, spices and tomato sauce. Omit the cheese for a vegan variation. Serve with additional tomato sauce, if desired.
Ingredients

- 2 boiled potatoes (small)
- cottage cheese (grated)
- coriander leaves
- 3 green chillies
- 1/2 tsp. red chilly powder
- 1/2 curry powder
- 1/2 cumin seeds (roasted)
- 1 tsp. salt
- 1 pinch asafoetida
- 2 bell peppers (fresh organic)
- 1 tsp. oil
- 5 shallots
- 3 cloves garlic

Directions
- For the stuffing, mash the boiled potatoes and grate the cottage cheese. Add all your spices and mix well. You can either cook them in the pan for a little or the stuffing the way it is. Meanwhile scoop out the seeds from the peppers so its hollow from inside. Fill it with the stuffing you prepared and bake it for half hour at 325 degrees F. Enjoy it with tomato sauce on the side.
