- 1/2 cup strawberry purée (use approximately 1/3 cup strawberries; process in blender until smooth)
- 1 1/4 cups water (divided into ½ cup, 125mL and ¾ cup, 175mL)
- 3 cups sugar
- 1 1/4 cups light corn syrup
- 1/4 tsp. sea salt
- 1/8 tsp. strawberry (natural, flavouring, optional, to increase intensity; I use Boyajian)
- 1/8 tsp. almond essence (optional)
- cornstarch (or potato starch, or icing sugar, or a combination for sifting/dusting)
