  • 1 pinch salt
  • 4 cloves garlic (peeled and very finely minced, use garlic press if you have one)

  • 3 chinese sausages (finely chopped)
  • 3 tablespoons cooking oil
  • 4 ounces dried shrimps (or more if you like more, soaked in water until soft, discard the water and finely chopped)
  • 4 cloves garlic (peeled and very finely minced, use garlic press if you have one)
  • 1/2 tablespoon sugar
  • 2 tablespoons cooking oil
  • 3 ounces red chili (stemmed, slit into half and seeded and finely chopped. Wear gloves when you work with the red chili)
  • 6 stalks spring onion (finely chopped)
  • 3 cups fried shallots (crisp, you can make your own or use a store-bought)
