Description
Tastiest, easiest spring salad ever! Here's the basic recipe...though I didn't really measure or follow a recipe...just sorta whipped it together:
Ingredients

4 SERVINGS
- 19 oz. chickpeas
- 1/2 English cucumber (a large, peeled and diced)
- 1 container grape tomatoes (halved or quartered)
- 1/4 cup red onions (minced)
- 1 avocado (diced, not pictured since I added it after OR about 1/4 cup crumbled feta cheese)
- 1 lemon (large)
- 2 Tbsp. olive oil
- 1 Tbsp. balsamic vinegar
- 1 tsp. Dijon mustard
- 1 tsp. honey (or maple syrup)
- 1 Tbsp. fresh dill (minced)

- Pour dressing over salad and mix well. Then add sea salt and freshly ground black pepper to taste
