- 1/3 cup chili paste (sichuan douban)
- 1 onion (small, or 3/4 medium, cut into chunks)
- 6 cloves garlic (smashed)
- 2 ginger (″, 33 grams of, cut into chunks)
- 3 Tbsp. mirin (Japanese sweet rice wine)
- 2 Tbsp. vegetable oil
- 1 Tbsp. toasted sesame oil
- 1 Tbsp. dashi (granules)
- 2 tsp. sesame paste (if Asian brands are unavailable, use tahini)
- 4 large free range eggs
- 3 Tbsp. soy sauce
- 2 Tbsp. dark brown sugar
- 1 Tbsp. water
- 2 shallots (small, finely minced)
- 2 cloves garlic (finely minced)
- 1/2 tsp. sesame seeds
- 1 pinch sea salt
- 1/4 cup vegetable oil
- 2 1/2 Tbsp. spice (Japanese seven, shichimi togarashi)
- 220 grams ground pork (fatty)
- 1 Tbsp. toasted sesame oil
- 1/4 tsp. freshly ground black pepper
- 1 Tbsp. dried shitake mushrooms
- 2 cups chicken stock (unsalted)
- 1 cup soy milk (unsweetened, unflavoured, Asian brands preferred but if unavailable, this will do, too)
- 1/2 cup miso paste (spicy)
- 2 ramen noodles (servings of fresh)
- 4 Tbsp. scallions (finely diced)
- 1 sheet nori (/Japanese sushi seaweed, cut into rectangular sheets)

This was fun to make (in my opinion) and delicious! Ordered some of the harder to find ingredients off amazon (she links to them in the recipe). I will be making this again soon!

Made this over the weekend with some dietary tweaks. T'was awesome.
Really flavorful and deep. Couldn't find the Japanese 7 spice so I made my own concoction which had sesame seeds, seaweed, nigella seeds, chili powder and a bit of garlic powder .
This dish is so good that I am forcing myself not to make it again too soon as I want to keep it special.
