- 6 Tbsp. unsalted butter (cold and cut into small pieces)
- 10 Tbsp. lard (organic, or vegetable shortening, cut into small pieces and frozen)
- 1 tsp. kosher salt
- 1/2 cup ice water
- 6 cups sour cherries (pitted, fresh or frozen; if frozen, defrost and drain first – 3 quarts)
- 1 cup sugar
- 1/4 cup cornstarch
- 1 tsp. canela
- 1/2 tsp. almond extract
- 1/4 cup cherry juice (or fresh orange juice)
- 1/8 tsp. kosher salt
- 3 Tbsp. unsalted butter (softened)
- 1 large egg (beaten with 1 Tablespoon of water for an egg wash)
- 3/4 cup powdered sugar
- 1/4 tsp. almond extract
- 2 1/2 Tbsp. water
