- 1 Thai chili (sliced, omit or use half if you don’t like spicy)
- 1/3 cup sauce (Fysh)
- 1 Tbsp. sugar
- 1 lime

- 4 shallots (halved and thinly sliced)
- 4 scallions (chopped)
- 1/2 bunch brown beech mushrooms
- 2 king oyster mushroom (stems, sliced thin)
- 2 oyster mushrooms (destemmed and roughly chopped)
- 1 handful bean sprouts
- 3 butter lettuce leaves
- 1 handful fresh basil
- 1 handful fresh mint
- lime wedges (to serve)
