- 1 1/2 cups arborio rice (or bomba)
- 1 red bell pepper (cored, seeded and cut into 1/2 inch strips)
- 15 oz. cranberry beans (borlotti beans, fresh or canned)
- 2 oz. cherry jam (Cornelian)
- ale (a generous splash of cherry)
- 1 tsp. ground sumac
- 1/2 tsp. paprika (smoked)
- 1 bay leaf
- kosher salt (to taste)
- black pepper (fresh milled, to taste)
- lemon wedges (for squeezing on each portion)
