- 1 onion (large, coarsely chopped)
- 5 cloves garlic (chopped)
- 2 lb. ground turkey (a mix of dark and light is recommended-may also use lean ground beef)
- 2 tsp. olive oil (additional)
- 8 oz. mushrooms (quartered, any variety)
- 3 carrots (sliced)
- 1 zucchini (medium, sliced and halved)
- 1 yellow squash (medium, sliced and halved)
- 3 bell peppers (medium, any color, seeded and cut into chunks)
- 1 eggplant (medium, peeled and cut into chunks)
- vegetable broth (or chicken broth (if needed to prevent sticking))
- 32 oz. whole peeled tomatoes (drained and coarsely chopped, shown in photo)
- 8 plum tomatoes (coarsely chopped, or 4 medium-any variety)
- 32 oz. crushed tomatoes
- 56 oz. marinara sauce (all-natural, with no sugar or preservatives such as Muir Glen, Mezzetta or Paul Newman’s)
- 3 Tbsp. tomato paste
- 1 tsp. dried oregano
- 1 tsp. marjoram (dried)
- 2 tsp. dried basil
- 2 tsp. thyme
- 1/2 tsp. kosher salt (or to taste)
- pepper (Coarse, or cayenne as desired)
- 6 cups spaghetti squash (hot cooked, 1 large, *see Notes for preparation tips)
- spinach (Sautéed, or other greens, if desired, *see Notes for calculating quantity needed)
- grated Parmesan cheese (Freshly, if desired)
