- 1 yellow onion (or large white, chopped)
- 3 carrots (medium sized, peeled and diced)
- 2 celery (medium sized stalks, halved lengthwise and diced)
- 1/2 tsp. celery seed (optional)
- 3 cloves garlic (minced)
- 1 lb. shredded cabbage (half of a medium sized head of cabbage)
- 1 cup wild rice (long-grain brown rice, or a blend, I use the Lundberg wild rice blend)
- 1/2 tsp. smoked paprika
- 1/2 tsp. sweet paprika
- 1/2 tsp. salt
- 1/4 tsp. freshly ground black pepper
- 8 cups low sodium vegetable broth
- 2 cups water
- 2 cups chickpeas (cooked)
- 2 Tbsp. lemon juice (freshly squeezed)
- 1 dash red pepper flakes (optional, for heat)

This is so much nicer that you would imagine a cabbage soup to be. I add a tin of tomatoes too, it seems better with this addition to me.
