- 3 Tbsp. extra-virgin olive oil (divided, you can also substitute butter for olive oil, but do make sure to keep some olive oil in the pan to keep butter from burning during the cooking process)
- 2 boneless, skinless chicken breasts
- 1 tsp. sea salt
- 1/2 tsp. black pepper
- 1/4 tsp. cayenne powder (optional)
- 6 cloves garlic (sliced)
- 3 medium tomatoes (firm and ripe, your choice, quartered)
- 1/3 cup balsamic vinegar
- 1 lemon
- 1 Tbsp. butter (to finish sauce, optional)
- 2 handfuls fresh spinach (rinsed, you can also steam the spinach if you prefer)
