- 8 lb. boneless pork loin (whole, brined, cut in thirds)
- 4 floz stone ground mustard
- 4 floz dijon (style mustard)
- 2 floz maple syrup
- 1 Tbsp. thyme (fresh, chopped)
- 2 cloves garlic
- 2 tsp. black pepper (fresh cracked)
- 2 tsp. kosher salt (adjust if needed)

Directions
- 1. In food processor, add mustards, syrup, thyme, garlic, pepper and salt
- 2. Mix on high until ingredients are well combined, set aside
- 3. Remove pork loins from brine, rinse and pat dry
