- 1 tsp. minced garlic
- 2 Tbsp. herb (huacatay, Peruvian)
- 1 tsp. pepper
- 1 tsp. salt
- 2 chillies (Peruvian chilli)
- 1/2 tsp. ground cumin
- 3 lemons (or limes, juiced)
- 1/2 tsp. achiote (annato)
- 900 grams yucca root (peeled and boiled, cook them like potatoes)
- vegetable oil (for frying)
- 240 mL cream (aji, 6 to 9 ajies in the blender with salt, 1 clove of garlic, ground black pepper, and 120ml oil)
- 1 1/2 Tbsp. olive oil
- 2 spring onions (chopped)
- 2 Tbsp. lime juice
- 1 pkg. queso fresco
- 1/4 red onion (sauteed, without oil)
- 180 mL oil
- 180 mL milk
- 1 tsp. turmeric (cook the turmeric in 2 tbsp hot oil, for 3 seconds)
- 1 chillies (aji)
- freshly ground black pepper
- salt
- 1 Tbsp. lemon juice
