- 1 chicken (rotisserie, chicken removed and shredded, about 4 cups)

- 1 red onion (small, halved, very thinly sliced)
- 1 seedless cucumber (large English, cut into matchsticks)
- 1 medium carrot (peeled, cut into matchsticks)
- 4 radishes (trimmed, thinly sliced)
- 1 Tbsp. red wine vinegar (+ 2 tsp)
- 1/2 cup herbs (mixed tender, torn mint leaves, parsley leaves etc)
- 1 cup greens (tender, such as spring mix or baby greens)
- 6 pitas (white, with pockets warmed)
