- 150 grams mozzarella cheese (firm, chopped into 1cm cubes)
- 1/4 cup olive oil
- 5/16 cup grated Parmesan cheese (as extra)
- 400 grams tomatoes (tins pureed)
- 400 grams chopped tomatoes (in juice)
- 1 tsp. dried oregano
- 2 Tbsp. caster sugar
- 1/2 tsp. chili flakes
- 500 grams spaghetti (dried)
- 5/16 cup chopped parsley (finely)
- 1 Tbsp. extra-virgin olive oil
